INGREDIENTS (serves 4)
4 cups water
1 spoon salt
1 cup of polenta flour (cornmeal)
40 g butter
100 g Parmigiano-Reggiano cheese + some to garnish
METHOD
step 1: To prepare the polenta
BRING water and salt to a boil in a large pot
POUR polenta slowly into boiling water
WHISK until polenta is stirred
step 2: Final preparation
REDUCE heat to low and simmer, whisking often, for about 5 minutes
COVER and COOK for 30 minutes, whisking every 5 to 6 minutes
Polenta is DONE when texture is creamy
step 3: to serve it
TURN OFF heat and add butter
MIX Parmigiano-Reggiano cheese into polenta
COVER and let stand 5 minutes before transferring the polenta to a serving bowl
